Let’s face it. Â Side dishes can get boring. Â We usually have a few side dishes that we go between in our head when we plan our menus & serve our meals. Â Mashed potatoes, rice, peas, beans, etc. Â We put so much thought into the main dish that we sometimes don’t put any thought into what we’re serving with it.
These simple green beans with bacon & caramelized onions are anything but boring. Â Heck, they might just outshine your main course. Â They are delicious!
The leftovers are really good too. Â Here’s my trick for making them go for a full serving the second time around, and still make them a little bit different. Â Dice some potatoes up small, Â place in a casserole dish, cover with tinfoil – and then bake at 400 degrees for 45 minutes. Â Remove from the oven & mix in the leftover green beans. Â Return to the oven for another 10 to 15 minutes, and serve. Â
I have provided a basic recipe with no real measurements. Â I never measure when I make this. Â Fresh green beans are best, but you can do this with canned too.
Cook your bacon until crispy in a skillet. Drain on a paper towel. Drain some of the grease, leaving 2 tablespoons in the skillet.
Steam the green beans for about 6 minutes, or desired tenderness.
Add the sliced red onion to the hot bacon grease. Saute until caramelized. Stir in green beans. Cook for 2 more minutes, stirring often. Season with salt & pepper.
I made this but I added tomatoes and it was delish!
