Ok – I admit it.  I don’t eat enough vegetables.  Wait, I take that back…..  I don’t eat enough vegetables that haven’t been fried.  Probably not the best way to eat them for nutritional value, but heck – they sure do taste good.  ;)

 

But, I need those vegetables.  My kids need those vegetables.  Heck, we all need them!  Even if we don’t wanna.

We don’t have to eat them per say though when we can throw them in a blender with some yummy fruits to make one awesome treat.  This Mean Green Smoothie is a personal favorite of mine because it packs in the nutrients that we all need – and more importantly (in my mind) it tastes good.

Mean Green Smoothies

Yield: 3/4 of a blender full

Mean Green Smoothies

Ingredients

  • 1 (16oz) pack of frozen strawberries
  • 8oz can pineapple (including juice)
  • 1/2 cup vanilla yogurt
  • 1 cup orange juice
  • 2 cups spinach
  • 2 bananas, sliced

Instructions

Combine all ingredients until combined in a blender. Blend until smooth. Add more orange juice if needed. Serve immediately.

    This is a good Smoothie, if you want to maintain the green color do not use all of the strawberries, only use three or 4 berries if your smoothie to look like the picture above. Otherwise the color is kind of blah. For a green Smoothie use spinach only, pink/red Smoothie use the Strawberries only. However you decide to make this Smoothie it is simply “Delish” as spoken by my Grandaughter.
