Creamy Refrigerated Spinach Artichoke Dip
 This delicious Creamy Spinach Artichoke Dip has all the flavors you crave, but is as easy as stirring & refrigerating. Â

I love Spinach Artichoke Dip.  It’s one of my favorite appetizers. I have never been able to get enough of it, and even like it so much that I enjoy it in different ways than a standard dip.  Like my Spinach Artichoke Dip Stuffed Mushrooms for starters.
Usually, I eat my Spinach Artichoke Dip hot. Â A few months ago, I picked up a container of a cold dip version of it at Whole Foods, and I was amazed by how much I loved it. Â So, when MIRACLE WHIP asked me to make their chilled version of the classic dip, I was stoked!
Rightfully so, too. Â That dip I had from the grocery store has nothing on this version.
I knew it would be good when I saw the recipe, after all I’ve enjoyed all the recipes of theirs I have tried, but how good it actually turned out to be was a fantastic surprise! And how easy it is to prepare is definitely a bonus.
You only need a few ingredients, and it’s one of those simple ‘mix-it-all-up-in-one-bowl-and-you’re-done’ kind of recipes.  Those are the bestest.
Here’s what you need:
- MIRACLE WHIP Dressing
- light sour cream
- artichoke hearts
- frozen spinach
- garlic powder
- green onions
- canned chipotle peppers in adobo sauce
Throw everything into a bowl…. Ok, so maybe not throw it. Unless you wanna.  Just get it in there.
Give it a good stir.
Refrigerate the dip for an hour for the flavors to meld and get even more awesome.
Serve with chips, bread, veggies, crackers, or eat with a spoon if you really wanna.

Ingredients
- 1 cup MIRACLE WHIP Dressing
- 1 cup BREAKSTONE’S Reduced Fat or KNUDSEN Light Sour Cream
- 1 can 14 oz. artichoke hearts, drained, finely chopped
- 1 pkg. 9 oz. frozen chopped spinach, cooked, cooled and well drained
- 1/2 tsp. garlic powder
- 3 green onions thinly sliced
- 3 canned chipotle peppers in adobo sauce chopped
Instructions
- Combine the ingredients in a bowl. Refrigerate for 1 hour before serving.

Canned chipotle peppers in adobo sauce. Where do I find this? I never heard of it, but this recipe sounds delicious! Is is hot? Not temperature wise, but taste wise. Might have to make this for our Labor Day Bar-B-Q!! Sure looks good!!
Walmart in ethnic area with Mexican food. strong and hot, use a little, 1=2 Tbsp, but dice it up and save the rest in ziplock bag in the freezer

You can find it in the Mexican food section of your local grocery store. And no, for the amount that you’re using – it does not add any spice/heat to the dish… just flavor!

Go Slow! You can always add more.
Start with 1 or even 1/2 – we love hot but 3 of our canned chipotles in adobo from Walmart will light you up… twice.

I found the chipotle peppers in adobo sauce, so I am making this dip tomorrow. I will also be adding a small can of water chestnuts (diced up) to add a little crunch to it. The spinach dip I’ve had before has this in it and adds just a little extra texture. Can’t wait to try it!
