I love Spinach Artichoke Dip.  It’s one of my favorite appetizers. I have never been able to get enough of it, and even like it so much that I enjoy it in different ways than a standard dip.  Like my Spinach Artichoke Dip Stuffed Mushrooms for starters.

Usually, I eat my Spinach Artichoke Dip hot.  A few months ago, I picked up a container of a cold dip version of it at Whole Foods, and I was amazed by how much I loved it.  So, when MIRACLE WHIP asked me to make their chilled version of the classic dip, I was stoked!

Rightfully so, too.  That dip I had from the grocery store has nothing on this version.

I knew it would be good when I saw the recipe, after all I’ve enjoyed all the recipes of theirs I have tried, but how good it actually turned out to be was a fantastic surprise! And how easy it is to prepare is definitely a bonus.

You only need a few ingredients, and it’s one of those simple ‘mix-it-all-up-in-one-bowl-and-you’re-done’ kind of recipes.  Those are the bestest.

Creamy Spinach Artichoke Dip

Here’s what you need:

  • MIRACLE WHIP Dressing
  • light sour cream
  • artichoke hearts
  • frozen spinach
  • garlic powder
  • green onions
  • canned chipotle peppers in adobo sauce

Throw everything into a bowl…. Ok, so maybe not throw it. Unless you wanna.  Just get it in there.

Give it a good stir.

Refrigerate the dip for an hour for the flavors to meld and get even more awesome.

Serve with chips, bread, veggies, crackers, or eat with a spoon if you really wanna.

Ingredients

  • 1 cup MIRACLE WHIP Dressing
  • 1 cup BREAKSTONE’S Reduced Fat or KNUDSEN Light Sour Cream
  • 1 can 14 oz. artichoke hearts, drained, finely chopped
  • 1 pkg. 9 oz. frozen chopped spinach, cooked, cooled and well drained
  • 1/2 tsp. garlic powder
  • 3 green onions thinly sliced
  • 3 canned chipotle peppers in adobo sauce chopped

Instructions

  • Combine the ingredients in a bowl. Refrigerate for 1 hour before serving.
