Kate Voegele (Mia Catalano from One Tree Hill fame as well as a singer) shared her grandma’s recipe for Southwest Dip with me, & it is absolutely delicious.

Ok y’all, I have a bit of a confession to make.

I am absolutely hooked on the show One Tree Hill. I never watched it when it was actually on tv. I started watching it on Netflix while I was walking on the treadmill, and a few episodes in – it was all over for me.  I became absolutely addicted. I was so absorbed that my exercise time went by so fast, I kind of forgot I was exercising… which is a great thing for me ‘cus I hate exercise (bonus points, I lost over 50 pounds!).  I wish I didn’t hate exercise so much.  I only exercise so I can eat bacon & cupcakes. What?  That’s not why you exercise?

Anyhoos – one of the characters on the show, Mia Catalano, was portrayed by Kate Voegele & she is not only a fabulous actress but she is an amazing singer.

Her voice is just so beautiful. One Tree Hill was what introduced me to her music, and I just fell in love. If you live in my town, you’re liable to see me driving down the road in my minivan blasting 99 Times & singing at the top of my not-so-beautiful voice.  Oh my gosh, and her version of Hallelujah is breathtakingly good, it literally gives me chills.  She recently went back on tour to promote her new EP, Wild Card, and I was so excited to see that she was coming to North Carolina to a town about 90 minutes from my house.

The concert was absolutely amazing & Kate invited me as her VIP guest.

I was treated to a private performance that I will never ever forget.  We were allowed to take pictures & videos of her singing, and I recorded about half of her song… I ended up putting my phone down to savor the other half.

You know what else is absolutely amazing??

I asked Kate if she would perhaps want to share a recipe with all of us here on the Mrs, and she said YES!  How cool is that?  Totally cool.  Yes, I answer my own questions.  I also talk to myself (hey, I’m a good listener!) but that’s a story for another day.

I made this dip for the first time yesterday, and let me tell you – it is SO good.  Not one bit of it was left!  As I was eating it, I started thinking it would probably a really amazing stuffing for chicken too.  It’s just as yummy as can be – and it’s totally going to go on my table for the Super Bowl! It’s a new family favorite for sure.

It’s super easy… super frugal… and super good.  That’s a lot of supers!

“My grandma introduced me to this recipe when i was in high school. She’s an incredible chef and makes all kinds of gourmet dishes, but also has some amazing staples like this up her sleeve. It’s super simple and absolutely delicious. I used to make it for my friends during football games in my college dorm because it was so easy! I’m a midwestern girl, and comfort foods like this are totally still my guilty pleasure. Now, every time I come home for the holidays, my mom always has this dip on the table while she’s cooking the main courses. It’s a huge crowd favorite and a really satisfying snack that holds everyone over until dinner. Hope you enjoy!” ~Kate

Grandma's Southwest Dip

Here’s how you make it.

And here’s what you need:

Beat 8oz cream cheese (room temp) with 1/2 cup sour cream until well blended.

Grandma's Southwest Dip

Stir in 2/3 cup pepperoni (chopped), 1 4oz can diced green chiles, 1 1/2 tablespoons dried minced onions, & 2 tsp chopped chives.

Spread the mixture into a 2 quart dish.

Sprinkle with 1/2 cup chopped pecans.

Bake at 350 for 20 minutes or until bubbly & slightly puffed.

Serve with chips, & enjoy!

Ingredients

  • 1 8 oz. pkg. cream cheese softened
  • 1/2 cup sour cream
  • 2/3 cup pepperoni chopped
  • 1 4 oz can diced green chilies undrained
  • 1 1/2 tablespoons dried minced onions
  • 2 teaspoons chopped chives
  • 1/2 cup chopped pecans
  • tortilla chips

Instructions

  • Beat cream cheese and sour cream until well blended. Stir in pepperoni, chilies, onion and chives. Spoon into 2-quart baking dish. Sprinkle with pecans.
  • Bake 20 minutes at 350 until puffed and edges are bubbly. Serve with chips.
