A Weekend at the Fair {at home} Part 1 – Funnel Cakes

I love fairs.  The rides. The games.  The look of pure happiness on the kids’ faces.  And of course, the food.  

Not just any food.  Fair food usually is cooked in one method – FRIED.  There are all sorts of concoctions coming out now too.  The news station did a segment on our state fair foods the other night & they showed things like Fried Butter & Fried Kool-Aid.  The fried butter sounds weird…but it looked like a fried biscuit with a buttery center.  Sounded nastier than it looked.  

But….

Fried Kool-Aid???  Seriously?  Who sits down & thinks of a new recipe to try, and frying Kool-Aid comes into their head? 

On the other end of the spectrum is the classic fair food.  And, what is more classic than the Funnel Cake?  


Even though they aren’t exactly cheap at the fair, they are extremely cheap to make at home.  And easy.  After you see how easy this is, you won’t want to buy them anymore when you’re cruising the fair.  Plus, this recipe makes enough to give 6-8 people their very own funnel cake.  If you bought that many at the fair, trust me, it wouldn’t be cheap.


And – the kids LOVE them!!  



Ingredients:

  • 3 eggs
  • 2 cups milk 
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 3 & 3/4 cup self rising flour (or all purpose + 2 tsp baking powder & 1/2 tsp salt)
In a large bowl, cream eggs, sugar, milk, & vanilla extract together until smooth.  Beat in the flour until smooth. The batter will be thin.
 
In a medium to large skillet, heat some oil on med/high heat until hot enough to fry (about 375 degrees).  Using a large serving type spoon – scoop a good bit up & drizzle it in swirls into the hot oil.  



Fry for 1-2 minutes on each side, until brown – flipping with a large spatula.  Drain on a paper towel lined plate.  Sprinkle with confectioners sugar, or any other toppings of your choice.
