Cheesy Ranch Potatoes
This has got to be my favorite potato dish (and my best friend’s as well!). It’s so super easy too.
Cheesy Ranch Potatoes
Ingredients
- Potatoes
- Cheese
- Ranch dressing
Instructions
- Dice up several red potatoes into relatively small chunks. Â I use about 3 pounds worth. Dump them into a baking dish Dump them into a baking dish, sprinkle with chili powder, seasoning salt, & pepper. Â Put several dollops of butter (or margarine) around the top of the potatoes. Cover with tin foil & cook in an oven heated to 400 degrees for an hour. Â
- Remove from oven & throw on a couple handfuls of shredded cheese of your choice. Â Then, drizzle on Ranch dressing to taste. Stir it all together & put it back in the oven, uncovered, for 5 minutes. Â
- That's it. Â Your done. Easy, right? Â Sometimes if I'm feeling fancy, I'll put on some broken up crispy bacon & green onions too. Â Either way, it's so good!
That looks so delicious. My son doesn’t like potatoes, but I think he will like this. I’m not sure if I can buy ranch dressing here in The Netherlands though. I will have to go on dressing hunt ; )

Of course – it can work with any kind of potato.

No water or anything needed for baking?
None at all.
I fixed these today & it was great! I’m not a fan of ranch so i made half with ranch & the other half i left the ranch out & my husband & I both loved it!
Love them…just love them.
These were so yummy! I was running short on time (I usually only have 30 minutes for dinner before everyone leaves for nightly activities.) So I put the diced potatoes in the microwave to soften. Then I mixed in the cheese and dressing and put it in the oven till the cheese was bubbly. Yummm!
AMAZING! SO super easy-and crowd pleasing! Of course we added bacon crumbles and tons of green onions. My friend Jenny said-“These are the best potatoes I have ever had!”. I love that there is no real measuring. Ideal for trips to the cabin-or even for camping! Thank you for this great recipe!

One of my favorite go-to sides. These are kitchen staples so I always have the ingredients on hand so it’s never an issue to just whip together at the last minute. They are so tender and cheesy and just delicious! I love that there’s no real thought or measurements needed. Just add as much butter as you think you need, as much cheese and ranch as you wish.
