Halloween is right around the corner, and tis the season for the Martha Stewart in all of us to want to make this & that to commemorate the spooky occasion.  But, if you’re like me – you’re looking for a totally un-Martha like approach to it that is both easy & budget friendly.  Sometimes, I’ll see such cute ideas – but the cost of the project frightens me… Not to mention finding some of the ingredients – being that I live in Small Town, USA, I’d practically have to drive to Atlantis to find some of the things called for.  I don’t like recipes & howto’s like that – are you with me?

So, here’s something to satisfy both the Martha in you – and the non-Martha side as well…. Jack-o-lantern Pudding Cups!  You only need a few things to make them – that all of us can find, even if we live out in the middle of no-where.  Plus, it won’t break the bank. They are super fun not only for a snack, but if you pack lunches for kids (or yourself, you big kid you!) imagine how adorable they’d be packed inside!  Bonus points, they don’t take any longer to prepare than a sandwich.

You will need:

  • an orange (or tangerine, clementine, etc)
  • 1 chocolate pudding cup (or prepared chocolate pudding of your choice)
  • plastic wrap

First, take your orange and cut off the very top.  Set the top aside, don’t throw it away.  Hollow out the middle.  You can do this with a sharp knife & a spoon – but I also find that a grapefruit knife is particularly helpful as well.  Don’t take out too much of the pulp, you don’t want to weaken the structure of the orange too much.

Now, using a sharp knife or scissors – carefully cut your jack-o-lantern face into the orange skin.

Now, line the inside with a small piece of plastic wrap.  This will keep the pudding from seeping out of the eyes & mouth.  Fill the plastic wrap lined orange with chocolate pudding, and fold the plastic wrap up at the top and tuck it in a little to neaten it up. Place the orange top back on.

That’s all it takes!  Now, you have the most adorable miniature jack-o-lantern – filled with a chocolatey treat 🙂

Equipment

  • plastic wrap

Ingredients

  • 1 orange or tangerine, clementine, etc
  • 1 chocolate pudding cup or prepared chocolate pudding

Instructions

  • Slice of the very top of the orange, set the top aside. Hollow out the orange using a knife & spoon. Don't scoop out too much of the pulp so that you don't weaken the structure of the orange. Using a sharp knife or scissors, cut your jack-o-lantern face into the orange.
  • Line the inside of the orange with plastic wrap. Fill with chocolate pudding. Fold the plastic wrap edges over the top of the pudding, and tuck inside. Set the orange top back on.
