Rainbow Pancakes

My kids are some of the world’s largest pancake connoisseurs.  I usually end up making several batches a week for them, and when they have a sleepover – it can be guaranteed that I will be making 3x the amount I normally do.

I seriously should start investing in flour & buttermilk stock the way I go through them both in my house.

We love doing different things with our pancakes to jazz them up a little.  Adding chocolate chips, or blueberries, turning them into a chocolate lover’s dream, making a pancake topping bar, or my personal favorite – stuffing them with bacon.  But turning the pancakes into rainbows – that seems to be their favorite. And the kids that sleep over?  They love it too!

And they’re so easy to pull together!

All you need to do is make up a batch (or three) of your favorite pancake recipe – ours being my buttermilk pancakes.  Divide the pancake batter into different bowls, and drop in your favorite shades of food coloring.  Mix it together really well to get your vibrant hues.

Cook the pancakes just like you normally would.

Buttermilk Pancakes

Serve you up a stack of the different colors, alternating between them.  Or, be picky and just take the colors you like. 😉
