Strawberry Cheesecake Bites
- 4oz cream cheese (can use low-fat)
- 3 tablespoons powdered sugar
- 1 tsp vanilla extract
- 22 strawberries, whole
- ¼ cup graham cracker crumbs
- In a small mixing bowl, beat together the cream cheese, powdered sugar, & vanilla extract until smooth & creamy. Set aside. Using a paring knife, hollow out the center of each strawberry. Gently fill each with the cream cheese mixture using a pastry bag or a small plastic bag with the corner snipped off. Once all the strawberries have been filled, dip the ends in the graham cracker crumbs. Chill in the refrigerator for 2 hours before eating (if you can stand it!)
