Strawberry Spinach Salad
Strawberries are quite plentiful this time of year – and since they are so sweet by nature, we tend to use them in dessert recipes more than anything. Â Well, aside from just stuffing them in your mouth instead of cooking with them…
Now, I do love me some strawberry dessert recipes, but I also like to do a little sweet & savory when the berry pickin’ time comes around. Â And my favorite way to do that is with this really simple Strawberry Spinach Salad. Â I could literally make a meal out of it!
Strawberry Spinach Salad
Ingredients
- 10 ounces fresh spinach or baby spinach
- 1 quart strawberries hulled & sliced
- 1/2 cup white sugar
- 1/4 teaspoon salt
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- 1 tablespoon poppy seeds
- 1 medium red onion thinly sliced
- sliced or slivered almonds to garnish
Instructions
- Using a blender, combine the sugar, salt, vinegar, & oil. Stir in the poppy seeds. Refrigerate the dressing until cold.
- In a large bowl, combine the spinach, strawberries, & red onions. Toss the dressing with the salad to coat. Garnish with sliced or slivered almonds.
Just wondering what happened to the original salad dressing recipe for this salad, I’ve been making it with honey and sesame seeds since I’d first found this recipe!! =)
Oops…I don’t see the link for the Cocoa Cayenne Encrusted Salmon that was posted at the same time. Both are recipes that I make all the time and continually share with family. Thanks so much for some great recipes!! =)
