No-Bake Sunflower Cake

I’ve made many desserts over the years and some of them have been quite elaborate and time consuming.  I once made a dessert from the cover of a favorite magazine and it took 2 days and many steps to complete that baby.  It was good, but it was a one and done.

Then there are those times when I need a dessert and I just don’t have time to make one from scratch. One of those times happened a few days ago when the grandkids came over for a last minute slumber party. Since I had much rather play with the kids than get stuck in the kitchen, I came up with the idea to make a Fall No-Bake Sunflower Cake.

I have seen several variations of this cake over the years, but I came up with my own version. Sunflowers are in full bloom here in the south and since fall is on the way (no matter what this 90º weather thinks) I figured it would be a cute and fun dessert.

It’s true confession time:  I didn’t even make the cupcakes for this dessert.  I bought them, too.  And I’m not going to hang my head in shame since they are gourmet cupcakes.  And they are delicious!

The good thing about this No Bake Sunflower Cake is that you can make it as small or as large as you’d like.  If you’re planning to make it smaller, you can cut the cloud cakes in half, making sure the cut side is against the cupcake center.

Ingredients

  • Little Debbie Cloud Cakes
  • Mini Chocolate Cupcakes
  • Candy Butterfly

Instructions

  • Arrange the cupcakes in the center of a cake board or large platter to form a circle.
  • Surround the circle of cupcakes with Cloud Cakes.
  • Add the Butterfly to one of the cupcakes.
