Bacon Guacamole Grilled Cheese Sandwich



I saw a recipe over at Closet Cooking for Bacon Guacamole Grilled Cheese Sandwiches the other day, and I was instantly in love with the concept of it. How could I not be?  Everything about it sounded incredibly delicious.

I already had some avocado in the house leftover from the Deviled Avocados I made the other day.  So, I got to work making this immediately.  I changed a couple of things in the recipe to make it more of my own, but the idea wouldn’t have sprang into my mind without the influence of the original.





Oh. my. word.  It was AMAZINGLY DELICIOUS!  I can not seem to gather the right words to explain just how good this sandwich is.  You are just going to have to try it yourself.  You must try this, and you must do it soon.  Can you seriously imagine another day of your life without having a bite of it?

Oh, can I have a bite while you’re at it?  I ate all mine.  





Bacon Guacamole Grilled Cheese Sandwich

Ingredients

  • 3 slices bacon fried to a crisp
  • 2 slices sourdough bread
  • 1 tablespoon butter room temperature
  • 4 slices pepper jack cheese hand cut rectangles from a block of cheese is best
  • 4 tablespoons guacamole room temperature

Instructions

  • Butter one side of each slice of bread. Layer half the cheese followed by the guacamole, bacon, and remaining cheese inside the two pieces of bread - buttered sides out.
  • Cook in a skillet over medium heat, flipping once, until both sides are browned & the cheese is melted. About 3 minutes on each side.
