Easy Monster-Mallow Cupcakes

My kids had a sleepover this weekend with their best friends, and all the kids that stay the night here know I’m going to make something sweet for them.  I enjoy sugaring up other people’s children & then sending them back home to their parents. That’s just how I roll.  

Cupcakes are a safe bet when it comes to entertaining adults children.  So, naturally, that’s what I turned to.  Since Halloween is right around the corner, I decided to spooky them up just a little with some monster marshmallows – although a lot of them came out looking more cooky than spooky.

I won’t lie.  I totally cheated on these with a boxed chocolate cake mix.  Don’t judge. After all, I had 5 kids in my house and my superwoman cape was at the dry cleaners.

But I did make homemade marshmallow buttercream frosting . I even resisted eating the whole bowl of it, and actually used it to frost the cupcakes.  It was difficult…but I was able to muster up enough strength to pull through.

How I made my monsters is really simple. I just squirted a dollop of green gel food coloring onto a paper towel, and dipped the top of the marshmallows in it & twirled it around the top edges to give my monster man some hair.  Then, dotted off the excess on the clean parts of the paper towels.  Easy peasy.

For his cooky spooky face, I used a little chocolate frosting & piped him on some eyes & a straight line for a mouth. Cookie icing (sold where the frosting is at your local grocery store) works really well for this.

Then, I plopped Mr. Monster Mallow up on top of my cupcake, and added a touch of sprinkles – and ta-da!  Done.

The kids loved these.  And, who am I kidding….so did I!

Easy Monster-Mallow Cupcakes

Ingredients

  • already baked cupcakes frosted
  • marshmallows
  • green gel food coloring
  • chocolate cookie frosting or other frosting to pipe monster's face

Instructions

  • Squirt a dollop of green gel food coloring onto a paper towel, and dipthe top of the marshmallows in it. Twirl it around the top edges to give the monster man some hair. Then, dot off the excess on the clean parts of the paper towels.
  • Pipe on 2 dots for the eyes & a straight line for the mouth on the marshmallow. Top each cupcake with one monster marshmallow.
