Flashback Friday – Brown Sugar Cinnamon Muffins
It’s that time again – Flashback Friday… where we take the time to revisit a delicious recipe or idea from the archives! This week, I’m re-sharing one of my family’s very favorite muffins – Brown Sugar Cinnamon Muffins (originally posted back in January of 2011). These delicious little gems are sooooo super simple to make! You probably already have all of the ingredients to make them right this second! They also freeze great, so don’t be afraid to make up a large batch!
My kids really love muffins in all shapes & forms, and to be honest – so do I. One of my family’s very favorites are these delicious Brown Sugar Cinnamon Muffins. These strudel topped little babies with a brown sugar filling, and cinnamon dusted tops are unbeatable.
They’re a cinch to make, and you only need a handful of normal pantry ingredients to pull them off. Nothing fancy in here; only 7 ingredients to be exact. And boy, are they yummy! They also freeze beautifully! So, don’t be afraid to make up several batches of these to stick in the freezer for later.
Here’s what you need:
- 1 3/4 cups self rising flour
- 1/3 cup white sugar
- 1 egg
- 3/4 cup milk
- 1/4 cup applesauce
- brown sugar, to taste
- cinnamon, to taste
Mix together the self rising flour & sugar. Add the egg, milk, & applesauce – mix well. Fill muffin cups a quarter of the way full with batter. Sprinkle on some brown sugar. No exact measurement, just sprinkle some on.
I love recipes like this.
Cover with an equal amount of batter. Sprinkle on some more brown sugar & a little cinnamon as well.
Bake in a preheated 350 degree oven for 15-20 minutes.
How easy was that?!
When you split them open, you’ll have a wonderful brown sugar layer waiting for you.
Make these today. Like right now. You probably already have everything you need to pull it off anyway.
You know you wanna.
