I think you could use chocolate syrup and marshmallow extract or syrup. They also make graham cracker extract and shortbread coffee syrup.

I use 1/4 teaspoon of cinnamon and 1 teaspoon of almond extract.

White Chocolate Macadamia Nut
Make your own sweetened condensed milk:
1 cup milk,
1 cup Milkadamia unsweetened macadamia nut milk
1/2 cup brown sugar
1/4 cup cane sugar
Dash cinnamon
Pinch salt
1 t 100% pure cacao butter chips

Mix with “cream” of choice. I had a pint of heavy cream from our local creamery. Amazing!!

Cinnamon doesn’t dissolve so maybe seeping a cinnamon stick in hot liquid like heated condensed milk before cooling it in fridge? I haven’t tried it but that may be the best bet to not have cinnamon silt and still get the cinnamon flavor. Hope it helps

pure chocolate extract instead. They tasted just like creamers I would buy in the stores.
