I’m trying it!  I pretty much can only make tuna hot dish and spaghetti but my boyfriend and I really were craving enchiladas.  I googled recipes and your page caught my eye.  Hopefully they turn out… just stuck them in the oven.

I made them the first time using beef. Today, I’m making them again with Pork. The meat is in the crockpot as we speak, and enchiladas are in my future! YUM! I made these about a month ago for my boyfriend who kept asking for Mexican style dinners. I had never experimented with enchiladas before so the combination of the crock-pot meat with the simple make-at-home enchilada sauce (I’ve always hated the store bought sauce): I figured I HAD to give it a try!
He/we loved them so much, that he requested them again and I happily will oblige.

Yes, they sure can – and I’d do it before baking. Also, you can freeze the meat itself beautifully.
