Fruit Cobbler Baked Oatmeal

Ingredients

  • 5 cups milk
  • 2 cups quick cooking oats or use old fashioned oats & run them thru the food processor like I do
  • 1 box yellow cake mix
  • 4 large eggs beaten
  • 1 stick butter melted
  • 2 teaspoons vanilla extract
  • 3 to 4 cups of your favorite fruit - fresh canned, or frozen.

Instructions

  • Preheat your oven to 350 degrees. In a large microwavable safe bowl, combine the milk & oats with a whisk. Microwave on high for 5 minutes, stirring halfway through. Let the bowl sit in the microwave for 10 minutes to thicken.
  • Stir the cake mix into the oatmeal. Whisk well. Mix in the eggs, butter, & vanilla extract.
  • Spray a 9x13 casserole dish with nonstick cooking spray. Pour in the batter. Sprinkle the fruit evenly around the top.
  • Bake for 40 minutes. Let cool for 5 minutes before serving.
