Fruit Cobbler Baked Oatmeal

Servings: 1 (9x13) dish full
- 5 cups milk
- 2 cups quick cooking oats or use old fashioned oats & run them thru the food processor like I do
- 1 box yellow cake mix
- 4 large eggs beaten
- 1 stick butter melted
- 2 teaspoons vanilla extract
- 3 to 4 cups of your favorite fruit - fresh canned, or frozen.
Preheat your oven to 350 degrees. In a large microwavable safe bowl, combine the milk & oats with a whisk. Microwave on high for 5 minutes, stirring halfway through. Let the bowl sit in the microwave for 10 minutes to thicken.
Stir the cake mix into the oatmeal. Whisk well. Mix in the eggs, butter, & vanilla extract.
Spray a 9x13 casserole dish with nonstick cooking spray. Pour in the batter. Sprinkle the fruit evenly around the top.
Bake for 40 minutes. Let cool for 5 minutes before serving.
