Bacon Guacamole Grilled Cheese Sandwich

- 3 slices bacon fried to a crisp
- 2 slices sourdough bread
- 1 tablespoon butter room temperature
- 4 slices pepper jack cheese hand cut rectangles from a block of cheese is best
- 4 tablespoons guacamole room temperature
Butter one side of each slice of bread. Layer half the cheese followed by the guacamole, bacon, and remaining cheese inside the two pieces of bread - buttered sides out.
Cook in a skillet over medium heat, flipping once, until both sides are browned & the cheese is melted. About 3 minutes on each side.
