Ingredients

  • 8 Oz whipped topping such as Cool Whip
  • 3.4 Oz package pistachio instant pudding mix
  • 20 Oz crushed pineapple drained
  • 1/2 Cup chopped pecans
  • 1 Cup mini marshmallows
  • 1/2 Cup shredded coconut optional

Garnishes

  • maraschino cherries
  • whipped cream

Instructions

  • Combine the pineapple, pudding mix, mini marshmallows, pecans, and coconut (if using) in a large bowl. Mix until well combined. Fold in the whipped topping.
  • Chill for at least 2 hours before serving. Garnish, if desired, before serving.
  • *Note - homemade whipped cream may be used instead of the cool whip, however it will only keep for 2-3 days with the homemade whipped cream. With the whipped topping, it will last for 5-7 days.
