Foolproof Prime Rib


  • 4 pounds boneless prime rib roast
  • 1/4 cup olive oil OR softened unsalted butter
  • 1 heaping teaspoon black pepper
  • 6 tablespoons of chopped fresh herbs I like a combo of thyme, rosemary, & basil or parsley.
  • 6-8 cloves minced garlic
  • 1 teaspoon garlic salt


  • Place roast on a plate and bring to room temperature for best results, about 3-4 hours.
  • Preheat your oven to 500 degrees.
  • Combine butter or oil, pepper, fresh herbs, & minced garlic in a bowl & stir to blend. Spread butter/oil mixture evenly over entire roast. Season roast generously with garlic salt.
  • Roast the 4 pound prime rib (see cook's note if using a larger or smaller roast) in the preheated oven for 20 minutes. Turn the oven off, leaving the roast in the oven with the door closed. Do not open the oven door at all for exactly 2 hours. Remove roast from the oven - let rest for 10 minutes. Slice and serve.
