Rinse and chop cherries and set aside.
Prepare the lime simple syrup by combining the sugar and water in a saucepan over medium heat. Bring to a boil, stirring often.
When syrup is boiling, add lime zest and juice and remove from heat.
Fill freezer popsicle molds halfway with cherries, and then add the lime syrup. If you want to use yogurt, leave ½” at the top of the mold. If you’re not using yogurt, fill to the top of the mold with syrup.
Add popsicle sticks to all the molds.
Cover and freeze. If using yogurt, freeze for about an hour and then add the yogurt. Doing it this way defines the layers.
To remove the pops from the mold, run the mold under warm water.
