Firstly, cut the honeydew in half and remove the seeds from the center. Cut the rind away from the melon and discard.
Place 4 cups of the golden honeydew in a blender or food processor. Blend on high until smooth.
Rinse the mint leaves. Toss them whole leaves into the blender and blend into the pieces are bite size.
Pour the honeydew melon into the popsicle mold.
Run your wooden sticks under water to help the puree to adhere to the stick.
Place into the freezer overnight to harden.
Run the mold under warm water for about 30 seconds. Remove the popsicles from the mold and eat.
Store in a freezer-safe bowl inside the freezer.
