Golden Honeydew Mint Popsicles

Servings: 10 popsicles


  • 4 cups golden honeydew melon rind and seeds removed
  • 8 mint leaves
  • 10 cavity popsicle mold


  • Firstly, cut the honeydew in half and remove the seeds from the center. Cut the rind away from the melon and discard.
  • Place 4 cups of the golden honeydew in a blender or food processor. Blend on high until smooth.
  • Rinse the mint leaves. Toss them whole leaves into the blender and blend into the pieces are bite size.
  • Pour the honeydew melon into the popsicle mold.
  • Run your wooden sticks under water to help the puree to adhere to the stick.
  • Place into the freezer overnight to harden.
  • Run the mold under warm water for about 30 seconds. Remove the popsicles from the mold and eat.
  • Store in a freezer-safe bowl inside the freezer.
