A Weekend at the Fair {at home} Part 1 - Funnel Cakes

Ingredients

  • 3 eggs
  • 2 cups milk
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 3 & 3/4 cup self rising flour or all purpose + 2 tsp baking powder & 1/2 tsp salt

Instructions

  • In a large bowl, cream eggs, sugar, milk, & vanilla extract together until smooth. Beat in the flour until smooth. The batter will be thin.
  • In a medium to large skillet, heat some oil on med/high heat until hot enough to fry (about 375 degrees). Using a large serving type spoon - scoop a good bit up & drizzle it in swirls into the hot oil. Fry for 1-2 minutes on each side, until brown - flipping with a large spatula. Drain on a paper towel lined plate. Sprinkle with confectioners sugar, or any other toppings of your choice.
