Carrot Top Chimichurri

Ingredients

  • 1 cup finely chopped carrot greens preferably organic
  • 1 tbsp minced garlic
  • 1 tsp garlic powder
  • 2 teaspoons dried oregano
  • 1/4 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tsp crushed red pepper
  • salt and pepper to taste
  • 1/4 cup white wine vinegar
  • 1/4 cup olive oil

Instructions

  • Combine all the ingredients together, adding the vinegar and oil last. Stir.
  • This keeps for several days in an airtight container. You can keep this at room temperature too.
