Carrot Top Chimichurri
Ingredients

finely chopped carrot greens
preferably organic

minced garlic

garlic powder

dried oregano

cumin

paprika

tsp
crushed red pepper
salt and pepper
to taste

cup
white wine vinegar
1/4
cup
olive oil
Instructions
Combine all the ingredients together, adding the vinegar and oil last. Stir.
This keeps for several days in an airtight container. You can keep this at room temperature too.
