Strawberry Balsamic 'BLT'


  • 2 cups fresh strawberries tops removed & sliced thin
  • 8 slices honey oat bread I used Arnold Oat Nut
  • 1.5 cups shredded or shaved iceberg preshredded works!
  • 12 slices thick cut bacon, cooked

Balsamic Black Pepper Mayonnaise

  • 1 cup mayo
  • 1 tbsp balsamic glaze
  • 1 tbsp diced fresh basil
  • 1 tsp freshly ground black pepper
  • salt to taste


  • Whisk together the mayo ingredients and set aside in the fridge for the flavors to marry while your bacon is cooking. You can cook the bacon in a frying pan or on a parchment paper lined baking sheet in the oven (375 degrees for about 20 minutes or until desired crispiness, rotating once).
  • Spread a layer of balsamic black pepper mayo on each piece of bread. I like to spread the mayo on both slices of bread, while the original recipe does just one slice per sandwich. Then top one slice of the bread with a layer of strawberries, then shredded lettuce, and then the bacon. Top with the other slice of bread. Slice and serve.
