Red Velvet Cookie Cake

Ingredients

For the Cookie:

  • 1 Box Red Velvet Cake Mix
  • ½ Cup 1 Stick Butter, Softened
  • 2 Eggs
  • 1 Teaspoon Vanilla
  • 2 Cups White Chocolate Chips

For the Frosting:

  • 4 Ounces Cream Cheese Softened
  • ¼ Cup Butter Softened
  • 2-3 Cups Powdered Sugar
  • 1 Teaspoon Vanilla Extract
  • Milk If Needed
  • Sprinkles If Desired

Instructions

  • Preheat oven to 350 degrees F. Line a 9-inch cake pan with foil or parchment paper and spray with a non-stick cooking spray.
  • In a large bowl combine butter, cake mix, eggs, and vanilla. Fold in white chocolate chips.
  • Press into pan. Bake for 23-26 minutes.

For the Frosting:

  • Combine cream cheese and butter until light and fluffy. Add powdered sugar a little at a time. Add milk if needed to reach your desired consistency.
  • Pipe or spread onto cookie cake. Top with sprinkles.
