Slow Cooker Lemon Garlic Pork & Veggies

Ingredients

  • 1 Smithfield Marinated Roasted Garlic & Herb Pork Roast or other cut
  • 2 lemons
  • 6 cloves garlic minced
  • 6 cups halved purple potatoes
  • 4 cups fresh green beans
  • 1 onion quartered
  • chicken broth enough to cover vegetable by 1/2 inch
  • garlic salt and pepper to taste

Instructions

  • In a skillet on high heat, sear the pork on each side.
  • Place the seared pork your slow cooker (I use a 6 quart). Spread the minced garlic cloves, purple potatoes, green beans, and onion around the pork.
  • Squeeze the juice of one lemon evenly over top of the vegetables and pork. Sprinkle with garlic salt and pepper to taste.
  • Slice the other lemon and arrange over top of the vegetables and pork. Pour in enough chicken broth to cover the vegetables by 1/2".
  • Cook on low for 6 hours. Slice the pork and serve with the pan drippings ladled over top.
