Copycat Larabar! These 2 Ingredient Cashew Cookie Bars so easy to make & taste just like their store-bought counterpart. You don’t even have to turn on your oven – this is a completely no-bake recipe!
These Cashew Cookie Bars are a copycat recipe of the popular Larabar. You can buy them at the store but when something is this easy to make myself, I see no reason not to.
- 2 ingredients
- no-bake
- just puree, press into a casserole dish lined with wax paper, and done
- keep in a sealed Tupperware container or wrap individually in plastic wrap

Want to make them Coconut Cashew Cookie Bars? Add 3/4 cup of unsweetened coconut to it. (they will still be Whole30 friendly!)
Want to make them a little sweeter? Add some dark chocolate chips or a little honey! (sorry, neither chocolate nor honey is Whole30 friendly but sure tastes good!) How about this peanut butter & chocolate version?
You could make so many different versions of this bar – the possibilities are really endless. And when the recipe is this easy, you experimenting is a lot easier too!
2 Ingredient Cashew Cookie Bars (Homemade Copycat Larabar)
Ingredients
- 12 oz pitted dates
- heaping 2/3 cup unsalted cashews
Instructions
- Combine all ingredients in a high powered food processor or blender on low. Process for about 2-3 minutes. Line a square baking dish with wax paper & press the cashew mixture firmly inside of it. Let it sit a few hours or overnight before slicing or crumbling.
