Healthy Banana Oat Mini Muffins – Recipe Card!
I shared this muffin recipe (and egg container idea) last year on Life Around Home for Earth Day, but never posted the recipe card here on the Mrs.  I figured it was perfect timing to add it here as well.
Not only are these banana oat mini muffins really good for you, but serving them in an empty egg container is a great ‘green’ idea for Earth Day!
Healthy Banana Oat Mini Muffins – Recipe Card!
Ingredients
- 3/4 cup all purpose flour
- 3/4 cup whole wheat flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 egg
- 3/4 cup milk or buttermilk
- 1/3 cup applesauce
- 1 teaspoon vanilla extract
- 2 overripe bananas mashed
Instructions
- Preheat the oven to 350 degrees.
- Combine both flours, oats, brown sugar, baking powder, baking soda, salt, & cinnamon in a bowl. Set aside. Whisk together the egg, milk, applesauce, & vanilla extract. Add the mashed banana & combine thoroughly. Stir in the flour mixture. Scoop the batter into a mini muffin pan. Bake for 8-10 minutes. Cool on a wire rack. So cute served or given as a gift in a recycled egg container!

This recipe is yummy but I found that at 350 degrees it doesnt bake within 8-10 minutes
