Start by spreading a thin, even layer of ground chicken on the top of each tortilla. Season the chicken with salt, pepper, garlic powder, and onion powder. Repeat with the remaining 7 tortillas.
Add a small amount of oil to your skillet. Place your tortillas chicken side down in a skillet, on medium high heat. Cook until chicken is slightly browned and cooked through. Flip and crisp the other side of your tortilla. Repeat with remaining prepared tortillas.
One all your smashed tacos are cooked to perfection, top each one with chopped lettuce, shredded parmesan, coarse black pepper, and croutons.
