Ingredients

  • 8 small tortillas (taco size) (can use low carb)
  • 2 lbs. ground chicken
  • salt and pepper to taste
  • 2 tsps. garlic powder
  • 2 tsps. minced onion
  • 1 head Romaine lettuce chopped
  • 5 oz. shredded parmesan
  • coarse black pepper to taste
  • 5 oz. bag garlic butter croutons
  • 1/3 cup Caesar salad dressing
  • oil for the skillet

Instructions

  • Start by spreading a thin, even layer of ground chicken on the top of each tortilla. Season the chicken with salt, pepper, garlic powder, and onion powder. Repeat with the remaining 7 tortillas.
  • Add a small amount of oil to your skillet. Place your tortillas chicken side down in a skillet, on medium high heat. Cook until chicken is slightly browned and cooked through. Flip and crisp the other side of your tortilla. Repeat with remaining prepared tortillas.
  • One all your smashed tacos are cooked to perfection, top each one with chopped lettuce, shredded parmesan, coarse black pepper, and croutons.
  • Drizzle each one with dressing and serve. Enjoy your healthy smash tacos!
