Start by adding your butter, peanut butter, salt, and vanilla to a large mixing bowl. Beat on high until smooth and creamy.
Slowly add in your powdered sugar, mixing as you go, until dough forms. Roll into a large ball.
Using a cookie dough scoop, make roughly 20 even peanut butter balls. Place in the freezer for one hour.
Place your almond bark in the microwave in one minute intervals, stirring after each, until melted and smooth. If chocolate does not melt down smoothly, add in your coconut oil.
Using a toothpick, dip each peanut butter ball into the chocolate, leaving the top exposed, as shown. Place on parchment paper and allow chocolate to set. You can dip them twice if you like a thick chocolate layer.
Once the chocolate is set, serve, and enjoy!
