I grew up making these No Bake Buckeyes with my Grandma Millie – literally since I was knee high to a grasshopper! It was one of the treats that my grandmother was ‘known’ for in our family. That alongside of her Oatmeal Cookies, that is. Each time she came to visit her children and her grandchildren, she always came loaded down with treats. These buckeyes are my Dad’s favorite. She would make him up a gallon sized ziplock bag worth of them and he would keep them in the freezer, trying to stretch them out some til her next visit. There was only one little issue with that. Little me sneaking them out and chomping down on them fully frozen any chance I got!

Add the Sugar: Slowly mix in the powdered sugar a little at a time. Keep mixing until a thick dough forms. It should pull together into one big ball and not feel sticky to the touch.


Roll the Buckeyes: Use a cookie scoop to portion out the dough. Roll each scoop into a smooth ball and place them on a parchment-lined baking sheet. You should get about 20 even balls.

Chill the Balls: Place the baking sheet in the freezer for one hour. It helps the peanut butter balls firm up so they’re easy to dip and don’t fall apart.
Melt the Chocolate: Add the chocolate almond bark to a microwave-safe bowl. Heat it in one-minute intervals, stirring well after each round, until it’s fully melted and smooth. If the chocolate feels thick, stir in a little coconut oil to loosen it up.

Dip the Buckeyes: Stick a toothpick into the top of each peanut butter ball. Dip it into the melted chocolate, leaving the top exposed so it looks like a classic buckeye. Place it back on the parchment paper. You can dip them twice if you like a thicker chocolate layer.

Ingredients
- 1 stick Unsalted Butter softened
- 1 cup Peanut Butter
- 2 cups Powdered Sugar
- 1/2 tsp Vanilla
- dash of Salt
- 1 lb. Chocolate Almond Bark
- 1 tsp. Coconut Oil
Instructions
- Start by adding your butter, peanut butter, salt, and vanilla to a large mixing bowl. Beat on high until smooth and creamy.
- Slowly add in your powdered sugar, mixing as you go, until dough forms. Roll into a large ball.
- Using a cookie dough scoop, make roughly 20 even peanut butter balls. Place in the freezer for one hour.
- Place your almond bark in the microwave in one minute intervals, stirring after each, until melted and smooth. If chocolate does not melt down smoothly, add in your coconut oil.
- Using a toothpick, dip each peanut butter ball into the chocolate, leaving the top exposed, as shown. Place on parchment paper and allow chocolate to set. You can dip them twice if you like a thick chocolate layer.
- Once the chocolate is set, serve, and enjoy!
