2. Arrange Ingredients in the Slow Cooker: Place the seared pork into your slow cooker (a 6-quart works perfectly). Scatter the minced garlic cloves, purple potatoes, green beans, and quartered onion around the pork. These veggies will soak up all the flavors as they cook.
3. Add Lemon Juice and Seasoning: Squeeze the juice of one lemon evenly over the pork and veggies. Sprinkle garlic salt and black pepper over everything to taste. Then, slice the second lemon and place the slices on top of the pork and veggies for extra lemon juice flavor.
4. Pour in Chicken Broth: Pour in enough chicken broth to cover the veggies by about half an inch.

How to Store Leftovers
To store leftovers from your slow cooker pork tenderloin meal, let everything cool down first. Once cooled, place the pork, potatoes, green beans, and any herb gravy into an airtight container.
Pop the container in the fridge, and your leftovers will stay good for 3-4 days. If you prefer, you can also wrap the pork in plastic wrap before placing it in the container for extra freshness.

Slow Cooker Lemon Garlic Pork & Veggies
Ingredients
- 1 Smithfield Marinated Roasted Garlic & Herb Pork Roast or other cut
- 2 lemons
- 6 cloves garlic minced
- 6 cups halved purple potatoes
- 4 cups fresh green beans
- 1 onion quartered
- chicken broth enough to cover vegetable by 1/2 inch
- garlic salt and pepper to taste
Instructions
- In a skillet on high heat, sear the pork on each side.
- Place the seared pork your slow cooker (I use a 6 quart). Spread the minced garlic cloves, purple potatoes, green beans, and onion around the pork.
- Squeeze the juice of one lemon evenly over top of the vegetables and pork. Sprinkle with garlic salt and pepper to taste.
- Slice the other lemon and arrange over top of the vegetables and pork. Pour in enough chicken broth to cover the vegetables by 1/2".
- Cook on low for 6 hours. Slice the pork and serve with the pan drippings ladled over top.
