Mexican Salmon Patties (for Cinco de MILTON)
Mexican Salmon Patties – this is my grandmother’s recipe for salmon patties that I jazzed up with some ingredients like black beans, corn, jalapenos, & taco seasoning. You won’t believe how delicious this is!!Â

Happy Cinco de Milton Day!Â
Cinco de Milton Day, you say? With the most beautiful black & white cat I’ve ever seen wearing a sombrero? What the what?!
Well, you see… Milton is that beautiful black & white cat that you see. He was MY Milton for nearly 18 years. He passed away 1 year ago today – May 5, 2017 & I told everyone that day that it was never going to be known in our household as Cinco de Mayo again. From now on, it’s Cinco de Milton. I have several pets but Milton was the most special. He was my favorite. I got him when I was 18 years old & he was my best friend. Like, for real. He really was. Even if that makes me a crazy cat lady… I’m totally ok with that. I had him through my marriage, the birth of all my kids, the death of my dad, & the death of my husband. When I felt like I couldn’t turn to anyone else, Milton was there. He always knew when I was sad & needed him. He was quite a special cat.
Well, to celebrate my Milton this year, and every year after this… this day is officially known on Mrs Happy Homemaker as Cinco de Milton. Because I am that cat lady.
Today would be the very first year that I share a Cinco de MILTON recipe. So, here we go with….
Mexican Salmon Patties
So, Milton loved salmon. Absolutely loved it. His favorite food. And since it’s technically Cinco de Mayo, I had to pair my Cinco de Milton recipe with a little Mexican flare. So, that’s how these Mexican Salmon Patties came to be.
I grew up on salmon patties. My MawMaw Light made them for me in large batches whenever I came up to visit. I would begin to salivate over them a few days before a visit to her house was coming up because they were just that good!
These Mexican Salmon Patties are basically my MawMaw Light’s recipe for salmon patties but I jazzed them up with ingredients like black beans, corn, jalapenos, taco seasoning, garlic, & cilantro.
Oh my word… like how did I not think of this before?! This combination is magic, y’all. I never in a million years would have thought that this combo would be as delicious as it is… but I have so been proven wrong on that. These are so amazing & the flavors actually meld together quite perfectly.
To take them up another notch, try out my homemade cilantro cream sauce (my favorite condiment, if you will…) with these. Oh my word… your tastebuds will be hosting a square dance on your tongue. Salmon patties have never been this good.
If my MawMaw were still alive, aka the QUEEN of salmon patties, I think she’d give me a couple thumbs up for this one. They’re so delicious!
Mexican Salmon Patties
Ingredients
- 2 14.5oz cans canned salmon, drained & deboned
- the juice of 2 limes
- 1 & 1/2 sleeves original saltines crushed
- 1 14.5oz can black beans, drained & rinsed
- 1 14.5oz can corn, drained
- 2 tablespoons mayonnaise
- 4 eggs
- 1 medium to large onion minced
- 1 cup chopped cilantro
- 3-4 diced jalapenos seeds in or out depending on how how you like it
- 4 tablespoons taco seasoning
- 2 tablespoons garlic powder
- salt & pepper to taste
- vegetable oil to fry
Instructions
- In a large bowl, combine all the ingredients except for the vegetable oil together. Using firm hands, make patties out of the salmon mixture. Add a little more crushed cracker if you need more binder.
- Fry in hot oil until browned on each side. Serve hot.
- Try it with my homemade cilantro cream sauce!
Its so hard when a furkid passes … Love the Cinco de Milton .. How precious to memorialize him that way !!!
