My kids really love muffins in all shapes & forms, and to be honest – so do I.  One of my family’s very favorites are these delicious Brown Sugar Cinnamon Muffins. These strudel topped little babies with a brown sugar filling, and cinnamon dusted tops are unbeatable.

They’re a cinch to make, and you only need a handful of normal pantry ingredients to pull them off.  Nothing fancy in here; only 7 ingredients to be exact.  And boy, are they yummy!  They also freeze beautifully!  So, don’t be afraid to make up several batches of these to stick in the freezer for later.

What do you need to make Brown Sugar Cinnamon Muffins?

  • 1 3/4 cups self rising flour
  • 1/3 cup white sugar
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup applesauce
  • brown sugar, to taste
  • cinnamon, to taste

Mix together the self rising flour & sugar.  Add the egg, milk, & applesauce – mix well. Fill muffin cups a quarter of the way full with batter.  Sprinkle on some brown sugar.  No exact measurement, just sprinkle some on.

Ingredients

  • 1 3/4 cups self rising flour
  • 1/3 cup white sugar
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup applesauce
  • brown sugar to taste
  • cinnamon to taste

Instructions

  • Mix together the self rising flour & sugar. Add egg, milk, & applesauce – mix well. Fill muffin cups 1/4 of the way full with batter. Sprinkle on some brown sugar.
  • Cover with batter (equal amount of batter as you used in the first step), & sprinkle on some more brown sugar & a little cinnamon as well.
  • Bake in a preheated 350 degree oven for 15-20 minutes.
