Baked Lemon Herb Tilapia

We’ve been trying to eat more fish in my home – and further pledging to do so even more. My husband (ok, you got me.. me too) are definitely more meat & potato people. Β And by meat – I mean steak. Β You know what I’m talking about.

But sadly, the nutritional experts tell us that we shouldn’t eat a big ol’ hunkin’ steak every day. However, they do recommend us eating fish 2-3 times a week. Β And, I’m pretty sure that doesn’t include fried catfish with tarter sauce 3x week… that would be in perfect world ;).

I’ve been experimenting with different ways to do up fish & this simple preparation of tilapia has become one of our favorites. It’s easy, healthy, & downright delicious. It’s a winner all around.

Not including salt & pepper, this recipe needs just 5 ingredients to put it together, and the preparation couldn’t be simpler either. Even meat & potato loving husbands (and wives!) will enjoy this one!

Baked Lemon Herb Tilapia

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients

  • 1 lemon
  • 4 tablespoons butter or margarine softened
  • 1 tablespoon fresh parsley
  • salt & pepper to taste
  • ΒΌ cup chopped green onions
  • 4 tilapia fillets about 6 ounces each
  • extra chopped green onions for garnish optional

Instructions

  • Preheat oven to 400 degrees.
  • Zest lemon & squeeze the juice into a small bowl. Whisk in the zest, butter (or margarine), parsley, salt, pepper, & green onions.
  • Place tilapia fillets in a casserole dish or baking pan. I like to like mine with tinfoil sprayed with nonstick cooking spray. Top with the butter mixture. Bake fillets for 15 minutes, or until fish flakes easily with a fork.
