Bacon Stuffed Buttermilk Pancakes

Bacon Stuffed Pancakes. Bacon-y, dipable, pancake deliciousness.
Does anyone remember that commercial for Beggin’ Strips dog treats? You know the one. The commercial focuses on the dog’s nose running around the house while the dog is saying ‘Bacon, Bacon, Bacon, Bacon – It’s BACON!’
Well, that commercial perfectly describes my behavior when bacon is anywhere near me.
It’s BACON!
So, as someone who compares herself to a bacon obsessed dog in a dog treats commercial – then you know that I go completely crazy for it and anything that contains that heavenly pork belly.
I’ve already stuffed bacon inside of waffles and again inside of french toast, so it’s only natural to stuff it inside pancakes too.
And, in case you were wondering – bacon stuffed buttermilk pancakes are awesome.
Totally awesome. Â And easy.
You take your favorite pancake batter, which for me is obviously my buttermilk pancakes, along with some already fried bacon.
Place that wonderfully yummy & crispy bacon in a pan or griddle, and then spoon the pancake batter on top.
Like so.
Cook for a couple of minutes until that one side of the pancake is done, and then flip to cook the other side. Â Simple enough, right?
Then, you serve. Â And watch everyone in your family ‘oooh‘ and ‘awe‘ over your bacon stuffed creation.
