I’m sure you all have seen that viral baked feta cheese pasta that has taken the internet by storm. In fact, I’ve already done one amped up version of it where I added some cream cheese to the mix to make it more creamy, along with a few other flavor bombs thrown in. Well, this time I’m taking that same idea and switching it up again. However, this time – I am not using feta cheese at all. I’m taking this method and giving it a little Southern twist by using pimento cheese instead.

Yes, pimento cheese! The nectar of the Southern goddesses… or something like that. 😉 And y’all – it’s nothing short of amazing and totally blows that feta cheese version right out of the window.

The premise is the same but the recipe is completely different. You still pile your ingredients in a dish, pop it in the oven – stir to combine and then add in the cooked pasta. So, it’s SIMPLE AND EASY and the flavors? Oh man, is it ever ON POINT. Absolutely amazing.

What do I need to make this Baked Pimento Cheese Pasta?

Here’s your cast of ingredients!

  • 2 10oz containers of your favorite pimento cheese – or you can make your own
  • 1 pint of grape or cherry tomatoes, cut in half
  • 4oz pimentos, drained
  • a few cloves of minced garlic
  • 2 chopped banana peppers (optional)
  • 2 chopped jalapeños, without the seeds (optional)
  • cooked pasta of your choice – I start off with 2 cups and add more as needed. Some folks like their pasta more saucy than others

How do I prepare this recipe?

It’s as simple as just piling the pimento cheese in the center of your baking dish (I used a 3 quart casserole dish) and piling the other ingredients (except for the cooked pasta) around it. You bake it in the oven at 350 for about 30-40 minutes and stir it all up to combine. Then, you mix in the cooked pasta and serve!

This makes a delicious meal or side all on it’s own! You can also mix in cooked chicken to this to make it a little more hearty.

Baked Pimento Cheese Pasta

Ingredients

  • 20 ounces Of your favorite pimento cheese
  • 1 Pint Grape or cherry tomatoes Cut in half
  • 4 Ounces Chopped jarred pimentos Drained
  • a few cloves of minced garlic
  • 2 banana peppers, chopped optional
  • 2 Jalapeños, seeds removed and minced optional
  • 2-3 cups cooked pasta

Instructions

  • In a 3 quart casserole dish or larger, pile the pimento cheese in the center. Sprinkle the halved cherry or grape tomatoes around the pimento cheese followed by the rest of ingredients, except for the cooked pasta.
  • Bake at 350 degrees, uncovered, for 30-40 minutes or until the top of the pimento cheese is golden brown.
  • Stir the pimento cheese into the vegetables to make the sauce. Next, mix in the cooked pasta. I start off with 2 cups of pasta and add more if I think it needs it. I like my pasta pretty saucy, so I usually stick with about 2 cups worth.
