Cheesy Sausage Corn Dip

This Easy Cheesy Sausage Corn Dip can be made with as little as 5 ingredients! It’s full of flavor and a family favorite.

This can be made in the oven, on the stovetop, or in the crockpot!

This Cheesy Sausage Corn Dip is a favorite of mine!

I’m a girl who loves to graze – which is just a fancy word for ‘snack’. And y’all, do I love a good snack. One of my favorite types of meals is one that feels like I’m snacking, whether it be a charcuterie board or something a good filling dip of some kind.

The dip that I’m going to share today is definitely a filling dip and boy, is it ever delicious!

It features sausage and corn – and plenty of cheese.

While most of you will cook this recipe in the oven, in the images you see – my dip was cooked on top of a wood fired stove (which you can totally do at home too if you have one!) but I’m going to provide stovetop/oven instructions for you. I usually cook it in the oven but lately we have had some gorgeous days and when the days are that nice, I really enjoy taking the cooking to the outdoors.

What ingredients do I need to make this Cheesy Sausage Corn Dip?

Here’s your cast of ingredients! The list is relatively short.

  • 1 pound breakfast sausage
  • 1 medium onion, minced
  • 1 jalapeno pepper, de-seeded and minced (optional)
  • 1 banana pepper or bell pepper, seeds removed & minced (optional)
  • 1-1/2 cups fresh corn, frozen thawed corn, or canned corn (drained)
  • 2-8oz packages cream cheese
  • 8oz Velveeta cheese, cubed
  • 2 cups shredded cheddar cheese, divided
  • chopped green onions or cilantro to garnish (optional)

How do I prepare this recipe? 

It’s easy!

Crumble the sausage in a hot skillet. Add in the onion & peppers (if using). Cook, stirring occasionally, until the sausage is cooked through. Drain off the grease from the pan.

If you’re using an oven safe skillet, just add the next ingredients to the pan. If you are not using an oven safe skillet, mix the ingredients in a bowl and then add them to an oven safe 2 quart dish.

Mix the cooked sausage mixture with the corn, cream cheese, velveeta cheese, and half of the cheddar cheese. Bake on 350 for 20 minutes. Top with the remaining half of cheddar cheese and bake for another couple of minutes, or until the cheese is melted. Garnish with chopped green onions or cilantro.

This can also be cooked on the stovetop or crockpot

Crockpot preparation:

After cooking the sausage and onions, drain the mixture and add to your crockpot. Stir in the rest of the ingredients, except for half of the cheddar cheese. Cook on low for 3 hours. Sprinkle on the rest of the cheddar cheese and cook on low for another 10 minutes or so, or until the cheese is melted.

Ingredients

  • 2 8oz packages cream cheese room temperature
  • 8 Oz velveeta cheese cubed
  • 8 Oz shredded cheddar cheese divided
  • chopped green onions or cilantro as garnish

Instructions

  • Crumble the sausage in a hot skillet. Add in the onion & peppers (if using). Cook, stirring occasionally, until the sausage is cooked through. Drain off the grease from the pan.
