I’m a sucker for a good breakfast casserole & this one by far is my favorite. It has all the fixings of a standard country breakfast but all layered together in a casserole. I’m talking eggs, cheese, sausage, gravy, AND buttered toast. Doesn’t that sound phenomenal? That’s because it is. 🙂

You know how some breakfast casserole recipes are all dry? Yeah, that’s not this one. The gravy mixture totally takes care of that one. No dry & tasteless breakfast casserole here – this is one that the whole family is going to repeatedly ask for.

The crust is made from frozen hash brown patties that have thawed. Just pop them in the bottom of your casserole dish, breaking any up so that they fit if necessary. They make a perfect crust. Then their is a layer of sausage & cheese, and eggs… and gravvvvyyy. Then I cut French bread into 1 inch cubes, give them a buttery hug (ok, I drizzle the casserole with melted butter but buttery hug sounded more creative) & sprinkle them over the casserole before baking it off.

You can make it the night before it you like, but don’t add the bread til right before you bake it for best results. It’s so easy though that you can just throw it together in a few minutes that morning without any time issue at all. Just brown your sausage, mix up your other ingredients, & layer it in a pan. Easy-peasy.

Country Breakfast Casserole

Ingredients

  • 1 pound sausage cooked
  • 1 package frozen hash brown patties thawed
  • 3-4 green onions chopped, plus extra for garnish
  • 2 cups shredded cheddar cheese
  • 6 eggs lightly beaten
  • 3/4 cup milk
  • 3/4 cup water
  • 1 packet Country Gravy mix 2.64oz
  • 6 slices French or Italian bread cut into one inch cubes
  • 2-3 tablespoons melted butter
  • salt & pepper to taste

Instructions

  • Preheat oven to 325 degrees.
  • Spray a 2 quart or 9x13 baking dish with nonstick cooking spray or butter it. Place the hash brown potatoes in the bottom of the casserole dish, breaking them to form if need be. Combine the cooked sausage with the chopped green onions & spread over the hash brown patties. Top with the shredded cheese.
  • In a large bowl, whisk together the eggs, gravy mix, water, & milk and salt and pepper. Pour the mixture over the hashbrown/sausage.
  • Arrange the bread pieces over top. Drizzle the bread with melted butter. Bake for 50-60 minutes, or until the eggs are set in the center. Let rest for 10 minutes before digging in.
