Nesquik Chocolate Cake

This Nesquik Chocolate Cake recipe comes from an old church cookbook from the 1960’s. The cake itself is a light and delicate chocolate cake with a thin icing that is poured over the hot cake, creating a super moist interior and an airy ‘frosting crust’ on the outside.

My bestie Leandra knows how much I love old cookbooks, especially ones from the area of North Carolina where I am from, so she often brings them to me when we get to see each other. Since she still lives in that area of Carolina, it’s a lot easier for her to track them down than it is for me these days.

Today’s recipe is from the latest one she gifted me – Nesquik Cake.

In the cookbook, it’s called Nestle Quik Cake as that used to be the name of the brand. Nowadays Nestle Quik is called Nesquik though so I’m going to call it that to avoid any confusion.

I actually have a huge tub of Nesquik at the house that I bought a while back, thinking my kids would drink it pretty fast seeing how fast they go thru chocolate milk.

Turns out that only 1 out of the 3 of my children turned out to be a fan of Nesquik chocolate milk, and that one kid doesn’t drink milk very often because it upsets her stomach.

So, that leaves us a LOT of Nesquik to use before the expiration. So, seeing a recipe that used that Nesquik definitely spiked my interest!

I was a little concerned that my 2 kids that don’t like Nesquik chocolate milk wouldn’t like this cake – but it turns out this cake was a winner all the way around.

All three kids gave it a thumbs up – and this Mama gives it one too. It’s easy, tasty, and not expensive to make at all!

It’s a very light chocolate cake too – not overly rich or anything. Actually, it’s on the delicate side as far as chocolate cake goes. Light and airy.

The icing is thin and it gets poured atop the cake as soon as it comes out of the oven – so it soaks all in the cake and makes it nearly irresistible. The bit of frosting that doesn’t soak in glazes the cake like a glazed donut. It gets a little crispy, a little whispy, and a lot of delicious.

It really reminds me of a really good chocolate pound cake – like the kind grandma would make.

Nesquik Chocolate Cake

Ingredients

  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 2 eggs beaten
  • 2 cups buttermilk
  • 2 cups sugar
  • 6 tbsp Nesquik chocolate drink mix powder
  • 2 tbsps baking soda
  • 1 tsp vanilla

For the topping:

  • 11/2 cups powdered sugar
  • 1 stick butter or margarine melted
  • 1/2 cup milk
  • 1 tsp vanilla extract

Instructions

  • Preheat your oven to 350 degrees.
  • Mix together flour, sugar, Nesquik, and salt. Stir the baking soda into the milk. Mix the eggs, baking soda/milk mixture, and the vanilla extract into the flour/Nesquik mixture.
  • Grease & flour a 9x13 baking pan or casserole dish (or spray with Bakers Joy). Pour in the cake batter & cook at 350 for 30 minutes.
  • A few minutes before the cake is to come out of the oven, mix together the topping ingredients with a whisk. Pour over the hot cake once it comes out of the oven. Allow to cool.

    Making this nestquik chocolate cake today with a 4yr old. Had double check the recipe 2cups sugar. She can’t wait for it to be done
