Easy Chocolate Chip Cookie Bars
It’s no secret that I like to cook & bake. Â And eat. Â I have quite the sweet tooth in fact. My whole family does for that matter. Â And with me loving to do the whole baking thing, my family has gotten to expect some sort of goodies always waiting for them to satisfy that sweet tooth.
But wait – what happens when there is nothing around to satisfy the sweet teeth in the house? Â Oh, the humanity. Â What’s a family to do? Enter my little combat weapon when it comes to short-cut desserts – a box of cake mix. Â That’s the secret to these easy-peasy chocolate chip cookie bars – they take just minutes to mix up & about 25 minutes to bake. Â 30 minute dessert from start to finish – I’m game.
Here’s what you need:
In a large bowl, combine a box of yellow cake mix with 2 eggs, 1/2 cup packed brown sugar, 1//4 cup of melted butter, & 1/4 cup water.  I like using my KitchenAid mixer for this on medium speed for 2 minutes.  Giving it an old fashioned super duper whipping with a whisk will work too 🙂
Stir in 2 cups of chocolate chips. Â I personally like milk chocolate, but semi-sweet is great too.
Spray a 9×13 pan with non-stick cooking spray and spread your ‘cookie dough’ into the dish.
Bake in a preheated oven at 375 for 25 minute, or until a toothpick inserted in the center comes out clean.

Ingredients
- 1 package yellow cake mix
- 2 eggs
- ½ cup packed brown sugar
- ¼ cup butter melted
- ¼ cup water
- 2 cups chocolate chips milk chocolate or semi-sweet
Instructions
- Preheat oven to 375 degrees.
- Combine the first 5 ingredients. Beat for 2 minutes with an electric mixer - or beat really good by hand with a whisk. Stir in 2 cups of chocolate chips.
- Spray a 9x13 baking dish with non-stick cooking spray. Spread the batter into the pan, and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
I make these alot and they are a huge hit! They are great done in a muffin tin as well BUT baking time varies. Usually in muffin tins it takes about 15 min to bake. I’ve also varied the recipe by adding coconut flakes and substituting the milk chocolate chips for white chips. It’s all around AMAZING!
