Strawberry Cheesecake French Toast

It’s strawberry season! I’ve gone down to the local ‘pick your own berries’ patch several times since berry season began and picked/ate/made jelly/made ALL. THE STRAWBERRY RECIPES.

One of my favorites to make when their are fresh strawberries around is this Strawberry Cheesecake French Toast. I mean, it’s strawberry cheesecake but for breakfast. What’s not to love?

This French toast is stuffed with a creamy cheesecake filling & topped with a fresh strawberry sauce. It’s actually very simple to make too. You can use whatever kind of bread that you would like for this recipe. My personal preference(s) are sourdough, brioche, or plain white bread.

With so many fresh berries around right now, it’s the perfect time to make this. You really just can’t beat the flavors of the summertime berries! I will still buy fresh strawberries over the winter, but they just aren’t the same. You know?

If you’re feeling a little creative , make this french toast but with leftover 3 ingredient cream biscuits. You won’t be sorry. The cream biscuits melt in your mouth and turns this already decadent dish up about 10 notches. In fact, I may just need to create a separate post for that one. Strawberry Cheesecake French Toast

Ingredients

  • 1 cup mashed fresh strawberries
  • ½ cup white sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 cup milk
  • 6 eggs
  • 1 8 oz package cream cheese softened
  • 1 tsp salt
  • 3/4 cup white sugar
  • 8 slices bread cut in half
  • 1 tsp butter
  • sliced fresh strawberries to garnish
  • 1 tbsp confectioners sugar for dusting
  • whipped cream for topping

Instructions

  • Preheat an oven to the warm setting (or 100 degrees) to keep the French toasts warm while they are all cooking. Heat mashed strawberries and 1/2 cup white sugar in a saucepan over medium heat.
  • Mix the cornstarch and water together in a bowl, then stir into the strawberries.
  • Cook and stir until thickened, about 5 minutes. Reduce heat to low and simmer while preparing remaining ingredients, stirring occasionally.
  • Whisk together the milk and eggs in a bowl; set aside.
  • Mix the cream cheese, vanilla extract, and 3/4 cup white sugar in a bowl until smooth.
  • Spread the cream cheese mixture over a half a piece of bread, and top with another piece. Repeat with remaining bread and cream cheese mixture to make 8 half sized sandwiches.
  • Heat butter in a large skillet over medium heat.
  • Dip the sandwiches into the egg mixture, 2 or 3 at a time, and place in the skillet. Cook until golden brown on both sides, about 3 minutes per side.
  • Transfer pan-fried sandwiches to a baking sheet and place in the preheated oven to keep warm while cooking remaining sandwiches.
  • To serve, top French toast with warm strawberry glaze and sliced fresh strawberries and sprinkle with confectioners sugar. Serve with whipped cream.
