Easy No-Bake Candy Bar Recipe—Homemade Baby Ruth Bars

If you’re a baseball fan, Y’all are going to love these Baby Ruth Bars just as much as the candy bar that’s been around since the days of Babe Ruth. With rich melted chocolate, sweet peanut butter chips, and plenty of crunchy peanuts, every bite is downright irresistible.

I love experimenting in the kitchen. Sometimes it works, sometimes it doesn’t, and sometimes I am surprised all together at the results.

Not trying to copy any name brand candy bars, the goal was just to make something that was fast, cheap, and tasted good.

This particular recipe was one that my late husband Michael made up by accident one day.

He set out to make a homemade candy bar with ingredients we had on hand. What he made tasted just like a Baby Ruth candy bar.

So, we photographed it and put it up on the blog. The thing is, they didn’t look like Baby Ruth bars back then. He individually shaped each candy bar with his hands.

This recipe has now gotten an update so it’s easier to make. It looks more like a candy bar, but the taste and ingredients are the exact same!

Y’all have to try this recipe, I just know you will love it as much as my Michael did.

Ingredients for Baby Ruth Bars

  • Peanut Butter Chips: These give your Baby Ruth recipe the creamy peanut butter flavor we all love.
  • Milk Chocolate Chips: This will  be your main source of melted chocolate.
  • Peanuts: You can’t have mock Baby Ruth bars without plenty of peanuts for a crunchy and salty bite.
  • Corn Syrup: This sticky ingredient holds everything together, just like in most candy recipes.
  • Unsalted Butter: Helps everything combine and makes the bars nice and smooth.

How to Make Baby Ruth Bars

Melt the Ingredients: In a microwave-safe bowl, add the peanut butter chips, milk chocolate chips, ½ cup of corn syrup, and 2 tablespoons of unsalted butter. Microwave for 1 minute, stopping halfway to give it a good stir. Heat until smooth and creamy.

Cool and Add Crunch: Let the mixture cool for just a few minutes. Stir in ½ cup of peanuts to give it that crunch like your favorite candy bar. Then let it rest for about 15 minutes so it’s easier to handle.

Chop More Peanuts: While that’s cooling, chop up the rest of your peanuts. You can use a sharp knife, a food processor, or even a blender. However you do it, you just want them nice and small to sprinkle on top.

Press Into Pan: Line a casserole dish with parchment paper. Press the chocolate and peanut mixture down into the dish, spreading it out evenly. This will be your base for the bars.

Add the Peanut Topping: Sprinkle the chopped peanuts right over the top.

Freeze to Set: Slide the dish into the freezer for about an hour. This firms everything up and makes slicing easy.

Slice Into Bars: Lift the mixture out using the parchment paper. Place on a cutting board and slice into candy bar shapes.

Dip in Melted Chocolate: Melt a little more chocolate in a large bowl, then dip each bar in so they’re fully coated. This last step makes them taste just like a real mock Baby Ruth bar—only better!

How to Store Leftovers

To keep your Homemade Baby Ruth Bars fresh, just store them in an airtight container. They’ll do fine on the counter for a couple of days, but I like to keep mine in the fridge so they stay nice and firm.

If you want to save some for later, pop them in the freezer—just wrap each bar in a little wax paper or plastic wrap first. That way, you can grab one anytime you’re craving a sweet treat.

Ingredients

  • 1 cup peanut butter chips
  • 1 cup milk chocolate chips
  • 1 cup peanuts
  • 1/2 cup corn syrup
  • 2 tablespoons unsalted butter

Instructions

  • In microwaveable bowl, combine the peanut butter chips, milk chocolate chips, 1/2 cup corn syrup, and 2 tablespoons of butter.
  • Microwave for 1 minute, stirring halfway through. Let the mixture cool for a few minutes, then stir in 1/2 cup of the peanuts. Let the mixture cool for about 15 more minutes.
  • Meanwhile, chop the other half of the peanuts using either a knife, food processor, or blender.
  • Press the mixture into a casserole dish, lined with parchment paper.
  • Top with chopped peanuts and put them into the freezer for an hour.
  • Slice them into bars. Then dip the bars into the melted chocolate.
