These Baked Parmesan Tomatoes are so delicious and a perfect low carb pizza replacement too. My kids even love these and they’re so super easy.
When my daughters were toddlers, I told them a fib that actually benefited them, and I intend on telling the same little lie to my son. Â
Â
A lie that benefits your children you ask? Â Why, yes. Â That’s what I said.
Â
My kids love cookies, as most children do. Â So, when they were toddlers, I would cut tomatoes into round slices & tell them they were ‘cookies’. Â My husband just looked at me & laughed with the ‘do you really think they’re going to buy that one??‘ look on his face.
Â
Turns out, they did buy it. Â And, they loved those tomato cookies. Â They are older now, and they still love tomatoes. Â Although, they now know they aren’t cookies. They often ask for tomato slices for snacks, so we always have them around the kitchen.
Â
They also really love these Baked Parmesan Tomatoes, and they are so easy, they can do it themselves, with supervision of course. Â My kids think they taste like crustless pizza.Â
Â
Slice the tomato into rounds, about 1/4 inch thick.
Â
Â
Sprinkle with shredded Parmesan cheese.
Â
Â
Shake on a little bit of Italian seasoning, salt, & pepper.

What a great way to prepare tomatoes! I used to tell my children that broccoli were baby trees, and they thought that was great, how cute “tomato cookies” , anything to get them to eat their fruit and veggies 🙂

MMMM! I’m definitely printing this one out! I’ll soon be having an abundance of tomatoes from the garden and this recipe will be perfect.
