Chipotle Chicken Lettuce Wraps
Chipotle Chicken Lettuce Wraps – cut back on the calories without cutting back on the flavor! These lettuce wraps are so easy to make, & so delicious!
Lettuce wraps are a favorite dish of mine. Â Usually I make them in PF Chang’s copycat fashion (as in this recipe) – and that’s what I was planning to do this time.
But lo & behold, I didn’t have everything I needed on hand – and I already had my pajama pants on… Totally didn’t feel like getting re-dressed and heading back out to the store. Â I guess I could have just slipped on my flip flops and gone out to the store in my jammies… but I try not to do that. We live in a small town, and let’s face it – if you’re all dressed up and looking good, you don’t see anyone you know. Best believe if you run out to the store in pajamas, flip flops, no make-up, and Medusa hair… you’re going to run into everyone. Â The ex boyfriend you haven’t seen in 10 years. Â Your kids’ best friends’ parents. Your doctor… who insists you need to come in for a check up because you’re looking pale.
Not that any of that has ever happened to me. Â Of course not.
Anywho – back to my lettuce wrap dilemma at hand. I wanted them, but didn’t have what I needed. Â So what’s a girl to do? Check out the pantry & see what else you can put together. Â I had this beautiful head of butter lettuce that I absolutely needed to use, so I was still hoping to do lettuce wraps. Â As much as I love lettuce wraps, I also love Mexican food… and I spied some chipotle peppers in my pantry.
Oooh. Chipotle. Smoky…Spicy. I was feelin’ it.Â
That was it! I was going to make Chipotle Lettuce Wraps – so I scoured my kitchen for some more key ingredients. Â Onion, some limes, cilantro, a jalapeno, & garlic. Â Oh yeah. Â This was already sounding good.
Here’s what I grabbed for this marvelous dish.
So, I guess my excitement became evident as this part & I completely failed on you all to bring a ton of pictures.  Just one of the cooking process – but don’t worry, it’s super simple.  One of those things were you just put it all in a skillet and cook. You can do that, I promise you 😉
Drizzle a little bit of olive oil in a large skillet & heat to medium/high. Pop in 1 pound of ground chicken. Â I buy boneless skinless chicken thighs and grind them up myself in the food processor – but you can buy it already ground too.
Stir the ground chicken, breaking it all up. Â Add in one small onion diced & 2 chipotle peppers (diced). Â Drizzle in a little of the sauce it comes in too if you like it spicy like I do.
Let the mixture cook until the chicken is lightly browned & cooked through. Â Stir in 1 diced & seeded jalapeno pepper (optional), 2 cloves of minced garlic, and the juice from one lime. Â Allow to cook 2 additional minutes, then remove from the heat.
Divide the mixture between pieces of your favorite lettuce. Â For lettuce wraps, I use either Romaine or Butter – but that’s just my personal preference. Garnish with cilantro & squeeze additional lime juice on top.
Eat up, & enjoy. Â And don’t even feel bad about enjoying these to a large extent because they are really low calorie & healthy too!

Ingredients
- 1 pound ground chicken
- 1 small onion diced
- 2 chipotle peppers in adobo sauce diced
- 2 cloves garlic minced
- 2 limes
- 1 bunch cilantro chopped
- 1 head of butter leaf lettuce or your favorite kind
- 1 jalapeno seeded & minced (optional)
Instructions
