Bottom of the Jelly Jar Oat Bars

I make these ‘Bottom of the Jelly Jar’ Oat Bars every time I clean out the fridge – and sometimes I open a jar of jelly (jam or preserves!) just to make them. This is one of my family’s most used recipes!Bottom of the Jelly Bar Bars stacked up on a blue rimmed vintage pyrex plate

I make these Bottom of the Jelly Jar Oat Bars almost every time that I clean out the fridge. We always have an assortment of different jellies in there. Sometimes a couple of the same flavor because someone (looking at my kids here!) always seems to open up more jelly when there is still some of the same flavor in the very back of the fridge.

I take out my spatula and scrape out all of the jelly until I get 3/4 cup to 1 cup of jelly. I prefer these made with 1 cup of jelly, jam, or preserves (or a mix of all!) but sometimes 3/4 is all I have, and they are just as good – just not as jammy. They are still my jam 😉

I sure have said jam a lot now…

I mix all the flavors of jam/jelly/preserves together. It doesn’t matter which flavors they are (ok, maybe no bacon jam or country ham jam… let’s stick with fruity things here) – when they are all combined and baked into these oat bars, any (fruit) flavor jellies you put together always bake up deliciously. Now, I do understand that 3/4 – 1 cup of jelly isn’t the bottom of just one jelly bar. I scrape out all the little bits in all of my jelly jars for this to make this amount.

You can also just use a brand new jar of jelly in your favorite flavor(s).

These are such a delicious snack – perfect for lunches too. They travel super well! Just wrap them individually in plastic wrap & pack them to go.

And on those crazy mornings where you just don’t have time for breakfast, but are hungry – these make a wonderful grab and go yogurt. One or two of these, a banana or yogurt and my coffee and I’m good to go!

I also use the same recipe at Thanksgiving with leftover cranberry sauce.

Bottom of the Jelly Jar Oat Bars

Ingredients

  • 1 cup jelly, jam, or preserves of any flavor(s) (mix them up!)
  • 1 cup all purpose flour
  • 1 cup old fashioned rolled oats
  • 3/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1 stick unsalted butter softened

Instructions

  • Preheat the oven to 350 degrees. Grease a 9 inch square baking pan.
  • In a medium bowl, combine the flour, oats, brown sugar, & salt. Using your fingers, work the 1 stick of softened butter into the dry ingredients until well mixed & crumbly.
  • Firmly press 2 cups of the streusel topping into the bottom of your greased baking dish. Spread the jelly/jam/preserves over the crust. Top with the remaining streusel.
  • Bake for 30 minutes, or until the crust is lightly browned. Let cool completely before slicing.

Notes

Feel free to combine different flavor jellies, jams, and/or preserves to make these!Â
