This Easy Chicken Taco Soup is the kind of dinner that’ll have everyone coming back for seconds! A ground chicken taco soup that is loaded with a variety of beans, ranch seasoning, taco sauce, diced tomatoes, green chilies, and more. It’s packed with a warm, comforting flavor and couldn’t be easier to make.

If y’all know me, you know that I love all things Mexican, and I love a hearty bowl of soup!

This easy chicken taco soup is budget-friendly and kid-approved. It’s one of our favorite recipes, and the whole family loves it.

Add a dollop of homemade sour cream and sprinkle some crushed tortilla chips on top of the soup in your bowl, and dive in!

Perfect for Taco Tuesday, a chilly night, or when you’ve got little time but want a delicious chicken taco soup that hits the spot.

Ingredients for Chicken Taco Soup

  • Ground Chicken: It’s lean, cooks up quickly, and soaks up all the taco flavor. You can swap it out for ground beef or ground turkey if that’s what you’ve got on hand.
  • Taco Seasoning Packets: I like using Kinder’s taco blend, but any brand works just fine. 
  • Can of San Marzano Tomatoes: These tomatoes are rich and flavorful. 
  • Can of Rotel Tomatoes: Adds a little heat from the chilies added to the tomatoes.
  • Can of Chopped Green Chilies: These bring a mild kick and a lot of flavor. 
  • Can of Ranch Style Beans: These are seasoned beans which will add a creamy, smoky flavor.
  • Can of Corn: A little sweetness to balance out the spice. 
  • Can of Pinto Beans: These make the soup heartier and thicker.
  • Can of Black Beans: They add texture and a bit of earthiness. 
  • Packet of Dry Ranch Dip Mix: Adds a creamy, zesty flavor and makes it feel like a mix between creamy chicken taco soup and chili. 
  • Bottle of Taco Sauce: Adds extra punch and ties all the flavors together. 

How to Make Chicken Taco Soup

  1. Cook the Ground Chicken: In a large pot or deep skillet, cook the ground chicken over medium heat until it’s browned and cooked through.
  2. Add the Taco Seasoning: Sprinkle in the chicken taco seasoning and stir well. Let it cook for another 2 minutes so the flavors soak into the meat. If you’re using homemade taco seasoning, just add it to taste.
  3. Toss in the Rest of the Ingredients: Pour in the San Marzano tomatoes, Rotel tomatoes, green chilies, ranch style beans, black beans, pinto beans, and sweet corn. Then, stir in the dry ranch dip mix and taco sauce. 
  4. Simmer on the Stovetop: Let the soup simmer over low heat for 20-30 minutes. Stir occasionally.

Recipe Tips 

  • Use a Heavy Duty Pot: I recommend investing in a heavy-duty pot so that when you cook your soup you get an even cook. You will find sometimes thinner pans and pots create hot spots for an uneven cook.
  • Crock Pot Method: You can easily cook it in the crockpot. Simply cook the meat and then add in all the other ingredients and cook for 4-6 hours on low.
  • Thin it Out: Now, this is a thicker soup. If you want to thin it up a bit, simply add in some chicken stock or a little water to help thin up the soup.

Ways to Serve

  • Top It Off: Pile on your favorite toppings like shredded cheddar cheese, a dollop of sour cream, sliced red onion, or fresh cilantro. A little lime juice gives it a fresh kick, too!
  • Add Crunch: Serve with a handful of crispy tortilla chips or tortilla strips right on top. You can also crumble them in like crackers—kids love it that way!
  • Make It a Meal: Scoop it over a bed of Mexican Rice or serve with a side of cornbread for a heartier bite. It turns into a hearty soup that’ll fill up the whole family.
  • Turn It Into a Chili Bowl: Add an extra can of beans, a spoonful of tomato sauce, and thicken it up a bit for more of a creamy chicken taco soup or bean soup feel.
  • Serve with a Salad: Pair it with a fresh green salad or my Street Corn Salad. for a full, healthy dinner.

Storing Leftovers

To store leftovers of my easy chicken taco soup recipe, let the soup cool down to room temperature first. Then, scoop it into an airtight container and pop it in the fridge. It’ll stay good for about 4 days.

This comforting soup gets even better the next day. You can also freeze it for a freezer meal—just thaw and warm it up on the stove top or in a crock pot on low heat.

Of course! Simply leave out the meat and just simmer all the ingredients in a pot for 30 minutes as directed. The beans are a great source of protein.

You can make taco soup a day ahead of when you want to serve it up. You will find the soup sitting in the fridge overnight will add even more flavor to the soup. Just ensure you store it in a sealed container in the fridge. Then warm it up in the stovetop or in a slow cooker.

  • 2 Pounds Ground chicken Can substitute ground beef or ground turkey
  • 2 Taco seasoning packets I like Kinders taco blend
  • 28 Oz Can of San Marzano tomatoes Undrained
  • 10 Oz Can Rotel tomatoes Undrained
  • 7 Oz Can chopped green chiles
  • 2 15oz Cans of ranch style beans
  • 28 Oz Can of corn Drained
  • 15 Oz Can pinto beans Rinsed and drained (optional)
  • 15 Oz Can black beans Rinsed and drained (optional)
  • 1 Packet Dry ranch dip mix
  • 8 Oz Bottle taco sauce

Instructions

  • In a large pot or skillet, sauté the 2 pounds of ground chicken. When cooked through, add in the taco seasoning and cook for another couple of minutes. You can use a different type of taco seasoning, just follow the directions on the back of the packet if it is different – or make your own.
  • Add in the rest of the ingredients. Cook on the stovetop on low/medium heat for about 20-30 minutes. You can also cook this on low in the crockpot for 4 hours.
  • The soup is on the thicker side so you can add a little water or chicken broth to thin it out some if desired. Alternatively, you can add a small can of tomato paste to thicken it up more if you want more of a chili consistency.
