Baked Pizza Tomatoes
All my fellow gardeners, what are your harvests looking like this year? Here in North Carolina, we’ve gotten tons upon tons of rain – and it’s rotted a lot of my plants. –sob- However, my tomato plants have all exploded with beautiful plump tomatoes.  This is the best tomato crop I’ve ever gotten. Other than just enjoying them freshly sliced, I have been able to  make many of my favorites like caprese salad & baked Parmesan tomatoes, mater sandwiches (with mayo & black pepper of course!), and even experiment a little.  These baked pizza tomatoes are the brainchild of one of those little experiments. They can be made up super fast & are like little crustless pizzas with fresh tomato.
Here’s what you need:
Preheat you oven to 425 degrees. Slice your tomatoes relatively thin. Â Sprinkle with Italian seasoning.
Lay a piece of Mozzarella cheese on top, and then a few pieces of pepperoni. Â Or vise versa if that’s the way you float. Â You could also use ham, or whatever other pizza toppings you desire. Â Sprinkle with a little more Italian seasoning.
Bake for 12-15 minutes.

Ingredients
- sliced tomatoes
- pepperoni
- Mozzarella cheese
- Italian seasoning
Instructions
- Preheat oven to 425 degrees. Sprinkle Italian seasoning on top of the sliced tomatoes. Top with cheese & pepperoni, and sprinkle a little more Italian seasoning on top Bake for 12-15 minutes.
